Why cannot we do without it?
Despite the efforts made by Italy and the European Union, the most striking paradox – particularly for Italian cuisine – is that although it is considered as one of the most diverse, nutritious and healthy in the world, Italy ranks 27th out of 113 countries surveyed (according to the Food Security Index, data published annually by The Economist). Evidently the issue is not just about the quality of the products we put on the table, but about our approach to nutrition as an act of awareness, meaning individual and collective empowerment, and education on the responsible use of the planet and its resources. That’s the main reason why at the negotiating tables of the leading democracies and the world health organizations, food security issues took priority and over the past decade have evolved from a necessity into an emergency.
